Zucchini Brownies are in a book I haven't released yet, Survive the Night. But, since I have a plant going bonkers on producing, and I have been making them a lot lately, I decided to share the recipe now. They are also my favorite brownie. Much better than you're thinking.

Zucchini Brownies
3 cups flour
1 1/2 tsp salt
2 tsp baking soda
8 Tbsp cocoa
2 cups sugar
2 cups peeled, grated zucchini
3 tsp vanilla
3/4 cup oil
nuts optional (I don't use because I share and too many people with allergies to them.)
Combine all the dry ingredients, stir in zucchini, coating it thoroughly. Add oil and vanilla. Mix well, spread in pan. Bake at 350 degrees. 20-24 minutes for jelly roll pan, 30-35 minutes for 9 x 13 pan. Good with Ice cream or on their own. Extremely moist. Hope you enjoy.



These are so moist and flavorful! I used pureed prunes (baby food) instead of oil, and they turned out great -- and even healthier!

This is probably the type of brownies that I could eat for the rest of my life. I've been wanting to bake this for a very long time, but I can't find the right recipe that I can actually do perfectly. I'm just so happy that I came across with this article of yours. I'm actually excited to do this by myself without making a disaster. Just kidding! I'm just really hoping that I can do this perfectly. I would definitely bake this together with my friends because we all love this brownie and the friends that eat brownies together, stays together. I just made that up, I'm sorry, but it's actually true right?

If a student has a lot of money in his student life as pocket money or savings, he should not waste it on merely enjoyment and other stuff. He should be frugal in this regard and give this amount to the needy and poor people of the society.

I've known zucchini for years now because it's a food my parents take for their daily diet. They have list of recipes for this one, but I never thought that a zucchini brownies would exist! Aside from the fact that it sounds delicious, the photos say that it's truly enticing. I would love to bake this and have it for my snack. Next week, I'll definitely buy the ingredients of this recipe and start baking this!
